Hearty Summer Porridge

Summer Porridge is my go-to breakfast when it's warm outside. It's cool and refreshing, but also comforting.
At long last, the weather is starting to break. Soon it will be time for some fun in the sun, and if your'e anything like me, your tastebuds will change with the warm weather. During the Winter, I love my comforting bowl of low sugar oatmeal with a few egg whites. It's warm, hearty, and it keeps me full for several hours. But, when the warm weather hits, I'm looking for something cool and refreshing.
This quick and easy recipe takes the place of warm oatmeal that I love in the Winter time, and the blueberries can be substituted for just about any fruit. Cubed peaches are one of my favorites.
Ingredients
- 1/4 cup uncooked old fashioned rolled oats
- 1/4 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1/4 cup blueberries (or enough to fill jar)
Directions
In a half pint (1 cup) jar, add oats, milk, yogurt and honey. Put lid on jar and shake until well combined. Remove lid, add blueberries and stir until mixed throughout. Return lid to jar and refrigerate overnight or up to 2 days. Eat chilled.
