Grilled Redskin Potatoes

Potatoes are such a satisfying side dish with any protein. Add a little grill flavor and crisp and it's a real winner!
Ingredients
- 6 redskin potatoes medium sized
- 1/4 cup extra virgin olive oil
- 1 teaspoon kosher salt
- black pepper to taste
Directions
Preheat grill to medium high (400 to 450 degrees)
Scrub potatoes clean with water
Place on a microwavable safe plate and microwave for 4-5 minutes until potatoes are slightly cooked
Remove from microwave and cut in half
Drizzle with olive oil and salt and pepper
Place potatoes on grill (white side down) and grill for 12-16 minutes, flipping midway through cooking time
Remove and serve
