Grilled Chicken and Farro Salad with Lemon Dressing

Salad with a hearty whole grain
Getting a little bored of the typical salad and protein? Looking for ways to change things up and add more healthy ingredients into your daily diet? Well, this recipe is for you. Farro is a nutty tasting whole grain that soaks up all the goodness of the dressing!
Ingredients
- ½ cup lemon juice (about 2 ½ - 3 lemons juiced)
- Zest of 1 lemon
- 5 springs of Thyme leaves removed
- 1 Tablespoon Fresh Oregano (chopped)
- ½ teaspoon Kosher Salt
- ½ cup Extra Virgin Olive Oil
- 1 ½ lbs boneless skinless chicken breast
- 1 cup dry farro
- 1 pint cherry or grape tomatoes halved
- 1 cucumber peeled and cut in cubes
- ½ red onion diced
- ¼ cup feta
- 6 ounces spring mix lettuce
Directions
Prepare the dressing and marinade by combining the first six ingredients in a small bowl and whisking
Pour half the dressing over the chicken and marinate while you cook the farro according to package directions
While farro cooks, chop all the veggies
Once farro is done, remove from pot and put in a medium sized bowl to cool
Preheat the grill to medium high (about 400-450 degrees)
Grill the chicken until the meat is completely cooked about 7 - 8 minutes per side
Remove from grill and rest the meat for at least 5 minutes
Add the veggies to the farro and pour about ½ of the remaining dressing on the mixture
Stir in the feta cheese
Slice Chicken at slight angle against the grain
On individual plates, place a few handfuls of lettuce, top with farro, then chicken
Drizzle the lemon dressing on salad and serve
