Good Old Fashioned Chili

Chili is a family favorite in our house. It warms you up on a cold day and the combo of beans and meat keep you satsified. I have been tweeking my own spice mixture for sometime instead of opting for the traditional seasoning packets loaded with sodium. The below is my go to mix. It is not too spicy for the kids and the smoked paprika gives the flavor a rich depth. Use any ground meat of your choosing. They all work well.
Ingredients
- 2 pounds of ground turkey, beef or buffalo
- 1 Tablespoon Extra Virgin Olive Oil
- 1 sweet onion diced
- 1 green pepper diced
- 1 can tomato sauce (15 ounces)
- 1 can stewed tomatoes (15 ounces)
- 1 Tablespoon tomato paste
- 1-2 cups beef broth
- 1 can of light kidney beans (15 ounces) drained and rinsed
- 1 can of dark kidney beans (15 ounces) drained and rinsed
- Salt
- Spice Mixture:
- 2 1/2 Tablespoons Chili powder
- 1 Tablespoon of cumin
- 1/4 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
Directions
In a pot over medium high heat, brown the meat
Once meat is cooked, remove from pot and drain any excess fat
Add oil to pan and heat, once heated, add onion and green pepper, sprinkle with a pinch of salt and cook for about 5 minutes until softened
Add tomato paste and continue to cook for about 2 minutes
Add meat back to pot, along with tomato sauce, stewed tomatoes, and one cup of broth
Stir in the spice mixture and bring to simmer
Reduce heat, add beans and cook for about 15 minutes (For a soupier consistency, add more broth)
