Crustless Quiche

who needs crust with quiche?
Ingredients
- 6 eggs
- 12 stalks asparagus cut into inch pieces
- 8 ounce package sliced mushrooms
- 1 onion diced
- ½ cup mozzarella cheese (remove week 1)
- ½ teaspoon salt
- 1 Tablespoon olive oil
Directions
Preheat oven to 350 degree
Spray a 9 inch pie pan or 8X8 square pan with cooking spray
Heat a skillet over medium high heat, add oil
When oil is hot add onion and cook until onion is softened about 4 minutes
Add the mushrooms and asparagus
Stir the veggies occasionally and cook for about five minutes until all are tender
Remove veggies from heat
In a large bowl, whisk the eggs
Add the cheese and salt and combine all well
The whites and yolks should be fully incorporated
Add the veggies and stir
Pour the the mixture into the prepared pan
Place in oven and cook for 30-35 minutes
The top will be golden and the middle will be set
