Crustless Quiche

who needs crust with quiche?

Ingredients

  • 6 eggs
  • 12 stalks asparagus cut into inch pieces
  • 8 ounce package sliced mushrooms
  • 1 onion diced
  • ½ cup mozzarella cheese (remove week 1)
  • ½ teaspoon salt
  • 1 Tablespoon olive oil

Directions

  • Preheat oven to 350 degree

  • Spray a 9 inch pie pan or 8X8 square pan with cooking spray

  • Heat a skillet over medium high heat, add oil

  • When oil is hot add onion and cook until onion is softened about 4 minutes

  • Add the mushrooms and asparagus

  •  Stir the veggies occasionally and cook for about five minutes until all are tender

  •   Remove veggies from heat

  • In a large bowl, whisk the eggs

  •  Add the cheese and salt and combine all well

  • The whites and yolks should be fully incorporated

  • Add the veggies and stir

  •  Pour the the mixture into the prepared pan

  • Place in oven and cook for 30-35 minutes

  • The top will be golden and the middle will be set
