Cornmeal Crusted Cod
Fish and Chips the SOS Way
Ditch the traditional fried fish for a healthy baked crispy cod. Serve it with sweet potato wedges and Voila, a Check Yourself Approved Fish and Chips.
Ingredients
- 4- 4 to 6 ounce cod fillets (skinless)
- 1 cup cornmeal
- 1 teaspoon chia seeds
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1 lemon cut into wedges
- Extra Virgin Olive Oil
Directions
Pre heat oven to 375 degrees
Line a baking sheet with parchment paper
Place the cornmeal, salt, pepper, chia seeds in a plastic bag and shake to mix
Whisk the eggs in a bowl
Dip one piece of fish into the plastic bag, then into the eggs, then back to the cornmeal and place the fish on the baking sheet
Repeat with all fillets
Drizzle oil onto of fish
Bake fish for about 25 minutes or until fish is done
Serve the fish with wedges of lemon
